The drought is still with us, a rather unusual occurrence for South Louisiana.  Vegetables in the garden are producing, just not at their normal rate.  I was hoping to put up large batches of various spaghetti sauces using my Mediterranean blend, but it won’t be this year.

Instead, I made several large pots of bone broth using chicken bones without Hormones or Antibiotics.  As for the meat of the chicken, they were put into soups with the flavoring of my Poultry Blend.  These I canned for later when the weather turns wet and cold.

With beef soup bones, I made bone broth that can be used if we start feeling under the weather or as a base for beef soup or broth to be added when making gravies.   I heavily seasoned a large batch of my soup bones with my Original Blend and had Randy smoke them for me.  This will add a nice smokey flavor to my soups this winter.

Preparations are in the works for a trip to the white sandy beaches of Florida at the end of the month.  I can’t wait to meet new people who may become Carmalete’s fans.
