1/2 OF A SMALL CAN OF NON-GMO TOMATO PASTE

2 TBSP CARMALETE'S "ALL NATURAL" SEASONING

1/8 TSP RAW SUGAR                     2 TBSP OLIVE OIL

1 8OZ. JAR OF SLICED MUSHROOMS; DRAINED (KEEP LIQUID)*

3 CLOVES GARLIC; CHOPPED         3 CELERY STALKS; SLICED THIN

1 LARGE ONION; CHOPPED

1 EA: GREEN AND YELLOW BELL PEPPER; CHOPPED MEDIUM SIZE

1 TSP EA OF DRIED OREGANO, BASIL, ROSEMARY, AND TYME

1-2 POUNDS OF GROUND DEER OR LEAN GROUND MEAT

PARMESAN CHEESE FOR TOPPING

PLACE A MEDIUM-LARGE STOCKPOT OVER MEDIUM-HIGH HEAT, POUR IN OLIVE OIL AND COAT BOTTOM AND SIDES. WHEN HOT, POUR IN YOUR TOMATOES (CHUNKED OR SLICED), SUGAR, AND TOMATO PASTE.  COOK FOR 30 MINUTES OVER MEDIUM HEAT, STIRRING OFTEN TO PREVENT STICKING.

ADD CHOPPED ONIONS, PEPPERS, CELERY, AND COOK FOR AN ADDITIONAL 30 MINUTES; STIRRING OFTEN.  NOW ADD EGGPLANT, GARLIC, MUSHROOMS, AND CARMALETE'S "ALL NATURAL" SEASONING.  STIR REALLY WELL TO COMBINE ALL INGREDIENTS AND SEASONING AND LET COOK FOR AN ADDITIONAL 2 HOURS ON MED-LOW HEAT; STIRRING OFTEN TO PREVENT SCORCHING.  TASTE AND ADD MORE SEASONING IF DESIRED.

ADD OREGANO, BASIL, ROSEMARY, AND TYME; COOK OVER A REDUCED HEAT FOR AN ADDITIONAL 30 MINUTES.

WHILE YOUR SAUCE IS SIMMERING OVER A LOW HEAT, GENEROUSLY PREPARE YOUR LEAN GROUND MEAT OR DEER, WITH CARMALETE'S "ALL NATURAL" SEASONING AND BROWN BOTH SIDES IN A GENEROUSLY OILED BLACK IRON SKILLET. STIR AND BREAK UP MEAT OFTEN. DO NOT LET IT SCORCH.  WHEN MEAT IS COMPLETELY BROWNED, YOU MAY ADD IT TO YOUR SAUCE OR NOT (YOUR FAMILY'S CHOICE).

SPAGHETTI SAUCE IS TO BE SERVED OVER PASTA WITH OR WITHOUT MEAT.  TOP WITH PARMESAN CHEESE.
