2 LG POTATOES; PEELED, WASHED, CUBED

CARMALETE'S SEASONING

1 LG ONION; PEELED, CHOPPED

1 1/2 C. CORN

4 C. COOKED RICE

BRING WATER TO A BRISK BOIL AND CAREFULLY ADD YOUR SEASONED MEAT AND BONES. SLIGHTLY REDUCE HEAT AND BOIL FOR ABOUT 2 HRS.  ADD POTATOES FIRST AND COOK UNTIL SLIGHTLY TENDER. ADD CORN AND ONIONS AND COOK UNTIL TENDER, APPROXIMATELY ANOTHER HOUR.

SERVE OVER COOKED RICE OR ALONE.            SERVES 6
