June 2022

Summer is definitely upon us and we are experiencing a drought. In my garden I have zucchini and crooked neck squash that are producing. Cherry, grape, and heirloom tomatoes plants are full of flowers, but no fruit.  The watermelon vines are taking over.  The non GMO Yukon Gold and Purple potatoes are beginning to die, so I will be harvesting them before long.

I will be cooking skillet breakfasts before long, using Carmalete’s Original Seasoning Blend in the potatoes and onions. Carmalete’s Mediterranean Blend or the  Carmalete’s Poultry Blend will be mixed in with my eggs.  My picky husband, Randy, will want just salt and pepper in his eggs, even though he is warming up to the idea of a little rosemary or oregano in some of his dishes.

The main dishes, prepared on a somewhat weekly basis are: beef roast in a nice dark gravy, served over a small bed of rice, accompanied either by maque choux corn or smothered down black eye peas.  Each of these dishes is seasoned with Carmalete’s Original Blend

Another favored meal is beef or beef/chicken fajitas. One side of the meat is seasoned with Carmalete’s Original blend and the other side is seasoned with my fajita blend.  As I stated in another blog, Randy is slowly coming around to Rosemary, but it is not his favorite spice . . . . yet.  When we are not cooking inside, we are grilling. Either steaks, burgers, chicken, or cooking fish and eating salads.
