6-8 med potatoes, peeled & sliced (not too thin)

small bunch of fresh parsley leaves*

1 large onion, sliced

1-2 Tblsp minced garlic

3/4 stick butter; sliced into pats

Carmalete's Base Seasoning

2-2 1/2 cups water

*Smoked sausage, tasso, or other meat; cubed

In a medium pot (rice cooker may be used) coat with oil. Layer your sliced potatoes, pats of butter, sliced onions and garlic. Sprinkle with the Carmalete's Base Seasoning. Repeat the process and add cubed meat (if desired).   Cover with water and cook on med-low heat for about 30-45 minutes stirring often to prevent from sticking to bottom of pot. When potatoes are really tender remove from heat & if so desired, add your parsley.

**Remember our seasoning does not have a high salt cap; so sprinkle lightly until you are familiar using it.
