Welcome to another year into the life of Carmalete’s; the Seasoning business, life on our farm, and our family.
We are growing and expanding. By the end of January and into the next few months, Carmalete’s entire line of seasoning blends and other products will be available in new stores throughout Louisiana, Texas, and Mississippi. So be watchful and the next time you are in need of seasoning, be on the lookout for our balanced and delicious blends. And don’t forget my Fry Mix. It isn’t just for meats, but also quite tasty on vegetables and fruits.
This is the month when our dining room table resembles an office credenza full of receipts, adding machines, pencils, erasers, and a ledger spreadsheet. That’s right, before it goes onto computer, it is all done by hand, the old fashioned way. Being married to a retired CPA has its advantages and disadvantages, especially when he is set in his ways. (Love him til death parts us).


Life on the farm began this week with disappointment. Our smallest hen, a golden laced beauty, named Sweetie fell from the roost during the night and was out of reach from the heat lamp. She walked out with the rest of the hens and roosters, but slowly made her way to our backdoor where she crouched and tucked her head in towards her chest. I knew she was in trouble. I picked her up, wrapped her tightly in a warm bath towel, and handed her to Randy. We managed to get some Vitamin B12 and Water of Life (a combination of 28 different minerals) down her throat. From there I positioned her into a small dog crate with a cushy bottom and a heat lamp directly above her, but sadly it was too late. Boudreaux came very close to leaving us as well from poisoning down the road. But with quick online research, I was able to nurse him back to full capacity. He is our livestock Large male Guardian Dog.
