3 MED SUMMER SQUASH

1 1/2 LG ONIONS; PEELED, SLICED

1/2 STICK BUTTER

2 EGGS; SLIGHTLY BEATEN

3/4 C HALF & HALF

1 1/2-2 C CROUTONS; BROKEN

GRATED PARMESAN CHEESE

6 OZ MOZZARELLA CHEESE; OR SHARP CHEDDAR, GRATED

1 GR BELL PEPPER; WASHED, SEEDED, SLICED

MED CASSEROLE DISH

WASH SQUASH; SLICE, AND GENTLY STEAM WITH SLICED ONIONS AND BELL PEPPER UNTIL TENDER.  DRAIN; ADD BUTTER, ONIONS, PEPPER, CARMALETE’S SEASONING.  PREP OVEN TO 350 DEGREES.

IN A MEDIUM CASSEROLE DISH, LINE THE BOTTOM WITH CROUTONS.  PLACE THE STEAMED VEGETABLES ON TOP. BEAT THE EGGS, MILK, AND CHEESE (OF YOUR CHOICE) TOGETHER, AND COVER THE STEAMED VEGETABLES. SHAKE A BIT MORE OF CARMALETE’S ON TOP. COVER WITH GRATED PARMESAN CHEESE, AND BAKE FOR 30 MINUTES
