May began with warm weather and the demand for crawfish at a minimum. In addition, the price to the farmers declined but the cost of supplies escalated including the price of bait, which was now artificial. Our ponds are full of alligator grass and water bermuda which grows naturally. Because of this, the crawfish in our ponds prefer frozen fish (pogy or shad) but will feast on the roots of the vegetation. They dislike artificial bait intensely, therefore they stopped coming to the traps. So, as usual, our crawfish season came to an abrupt end.
With the weather being so much warmer, salads and grilling made their presence and was welcomed wholeheartedly. Ribeyes and T Bone steaks, hamburger steaks, salmon steaks, accompanied either by grilled or roasted vegetables and or salads became staple meals in our home.

The steaks were seasoned with my Original Seasoning Blend. The hamburger steaks were dressed either with the Original Seasoning Blend or the Organic Mediterranean Blend, depending on who was eating here. The Salmon steaks were prepped with my Organic Mediterranean Blend, fresh squeezed lemon juice, and sliced onions on top.
The roasted or grilled vegetables were either prepped with my Organic Gourmet blend, the Organic Mediterranean Blend, or the Organic Poultry Blend. Delicious!!!! Can you tell that I love Rosemary and Oregano? And the Organic tastes so much fresher than regular shelf spices.
I hope I have inspired you, the reader, to take a little extra time to prepare some meals with my Original Seasoning and or the Organic Blends. Remember to have fun, no matter what you are preparing for your family. And take the time to include your children. They are the future cooks and possibly chefs in the making. Building memories in the kitchen builds stronger families and you may come to the realization that you enjoy cooking.
Have a blessed day,
Carmalete Manuel
