April 2022

April brought about a houseful of company for more than a week.  Two of our grandsons were out of school and helped their grandfather with crawfishing.  They worked hard and to keep them going strong, three meals a day were prepped and cooked.   On occasion, the evening meal was overlooked and they could be found sleeping on the couch or a simple salad was consumed.

One particular meal was boneless legs of lamb prepped with my Organic Original Seasoning blend marinated a couple of days in Avocado Oil, fresh squeezed lemon juice, and adorned with sliced red onions.  This was grilled to perfection and accompanied by bitter herbs (a variety of fresh lettuces coming from my garden and yard), as well as homemade matza (unleavened tortillas), and a couple bottles of red wines not too dry yet palatable to the tongue. New York Cheesecake, apple crumble pie, and different varieties of ice cream graced the island and provided an assortment of desserts.

With the dining room table filled with friends it did not take long to consume this delicious meal.  But we did have to take a break before starting on dessert.  And I am sure you can understand why.

Bon appetit y’all,

Carmalete Manuel
