Colder weather has creeped around the corner with an occasional bout of freezing temperatures. It is quite weird, because we are experiencing a drought.  The crawfish do not care for freezing temperatures, but Randy does. Beginning his day even earlier now, he comes in for breakfast a little earlier which enables us oftentimes to have three meals a day, but not always.  And that is fine with me.

In addition to preparing the meals and performing most of the cooking, I am also the distributor for Carmalete’s Creations and do a lot of traveling restocking store shelves.  This enables me to introduce my seasoning blends and fry mix to newcomers.  It also allows me to visit with many who have embraced my blends and are enjoying cooking with them.

This month’s meals consisted of beef meat cooked slowly and served over rice with maque choux corn and prepared with Carmalete’s Original Seasoning blend, homemade spaghetti sauce made with chopped eggplant and portabella mushrooms prepared with my Organic Mediterranean blend and served over baked spaghetti squash prepped with my Organic Gourmet blend, beef and or chicken fajitas prepped with my Organic Fajita Blend and fresh lime juice.  We served fried chicken and fresh caught fish occasionally prepped with my Organic Poultry Blend or the Organic Mediterranean Blend.

Now if these meals do not make you hungry, I don’t know what will.  Just writing about them has my tongue dancing.  Remember, think outside the norm and play around with recipes.  You will never know what a meal will taste like unless you add your own ideas to it.
