June 2021

The month of June was spent, for the most part, restocking stores in Louisiana, Southeast and Southwest Texas, with my Original Can of seasoning and the Fry Mix. Also traveled to Texas to exchange cases of the Original Can seasoning for several cases of Carmalete’s Organic Blends.

With school out and grandchildren wanting to spend time with us, we welcomed them as often as possible.  Fishing trips were out of the question due to the constant rain and swollen lakes. Too dangerous. So for the most part, they spent their time picking up branches to be burnt, walking with the goats and gathering eggs.

Middle of the month, we had a friend come down from West Texas to spend a week.  He was ecstatic to have the opportunity to go fishing with Randy for some speckle trout and redfish.  I rented them a camper on the edge of Pointe Aux Chenne, with lights provided at the dock for night time fishing. Randy and James had a ball fishing all night and fishing mid morning and afternoon.  They caught over 400 but kept only 40 because they were either too short or too large.

Upon returning, it was time for me to comb over the fillets for missed scales or bones.  Then packing them in water for the freezer.  James went home once again with several messes of fresh frozen redfish and speckled trout.  The drums he caught were not fit to be kept.
